This delicious fortified cookie base includes package instructions for chocolate chip, lemon, sugar, peanut butter, and "oatmeal-type" cookies.

Kirkman’s best-selling Five Recipe Cookie Base provides a great alternative to use for family get-togethers and school functions.

Five Recipe Cookie Base Ingredients:

Brown rice flour, sweet rice flour, potato starch, sorbitol, calcium carbonate, calcium citrate, magnesium citrate, zinc citrate, dl-alpha tocopheryl acetate, xanthan gum, salt, baking soda, vanilla bean, baking powder, guar gum, natural flavors, and sucralose.

Directions:

  1. Preheat oven to 375-400° (ovens vary, find optimum temperature).
  2. Prepare baking sheet using a non-stick spray or mat.
  3. In a large bowl, combine 2 large eggs with 2 sticks (220 gr.) casein free/gluten free margarine using a blender. (Note: For peanut butter cookies, substitute one cup peanut butter and 1-2 tablespoons of water for ONE stick margarine).
  4. Add the cookie mix and blend well until uniform. For sugar cookies, proceed to step six. For lemon cookies, add lemon extract as desired for taste and proceed to step six.
  5. For chocolate chip cookies, add Casein Free/Gluten Free chocolate chips (5-8 oz) and mix until blended well. For oatmeal type cookies, add 2½ ounces of ground poha flakes instead of the chocolate chips.
  6. Refrigerate dough for one hour if desired for easier handling.
  7. Drop ¾ oz. (22 gr.) of dough per cookie onto baking sheet and bake for approximately 10-12 minutes or until brown on top. Adjust time to allow for oven variations.Package makes about 50 cookies.
  8. Allow cookies to cool and store in refrigerator in covered containers.

Substitutes:

  1. Eggs can be replaced with equal amount of egg substitute.
  2. Carob chips or other chocolate chunks may be used instead of chocolate chips.

Doesn’t contain chocolate chips. Kirkman® sells casein, gluten, and soy free Paskesz chocolate chips which are recommended.
